Marinated Salmon and Scallops
2/3 pounds skinless, boneless salmon
1/2 pound scallops
1/2 cup lemon or lime juice
12 large basil leaves
4 tablespoons olive oil
4 drops Tabasco sauce
1/2 teaspoon salt
3/4 teaspoon pepper
Cut the salmon into 1/2 inch cubes.
In a mixing bowl, combine all the ingredients and blend will. Cover with plastic wrap and refarigerate for 4 hours.
Serve garnished with fresh coriander.
